Khola Sapori Pitha
Khola Sapori Pitha is a traditional Assamese pancake prepared out of rice-flour. It pairs well with dry subzis such as aloo ki subzi.

Ingredients
2 cups: | Rice-flour (The flour can be prepared at home with any local variety of rice or ready-made rice-flour available in the market can also be used) |
1 medium: | Onion; chopped (optional) |
2 tablespoons: | Oil (mustard or refined) |
Salt, as per taste
Water as required

Directions
Preparing the rice-flour
- Keep 2 cups of rice soaked in a large bowl of water for 4 to 5 hours.
- Drain the water and spread the wet rice on a newspaper or a dry cloth and let it dry.
- When the rice is dry, add it to a grinder and prepare a fine powder.
- Remove the flour from the grinder and sieve it to get an even finer flour.
Alternatively, ready-made rice flour available in the market can also be used.
Preparing the batter
- Pour the rice-flour in a large bowl and add water, salt and chopped onions (optional) to it.
- Add as much water required to prepare a runny batter.
Preparing the Pithas
- Heat oil in a wide non-stick pan (an iron kadhai can also be used). Tilt the pan to spread the oil evenly on the pan.
- Spread the batter delicately on the pan to form a thin circular disk. If you are using an iron kadhai tilt and rotate the kadhai in such a manner that the runny batter is evenly spread in the shape of a circular disc. Keep the flame on medium.
- After a minute, flip the Pitha carefully on to the other side using a turner spatula. Wait (for half a minute) till the Pitha is done
- Repeat, till the batter runs out.
Nowadays, novel ingredients such as grated carrots, beans etc. are also sometimes added to the Khola Sapori Pitha to make it more wholesome.
