Sandesh/Shondesh

Sandesh/Shondesh is a Bengali sweet made from chaana. Different varieties of Sandesh are prepared in Bengal using different types of sweeteners like sugar, palm jaggery etc. These include the Kodapaker Sandesh and Nolen Gur Sandesh.

Ingredients

1 cup: Chaana/chenna
2.5 teaspoon: Sugar
1 teaspoon: Warm milk

A small pinch of cardamom powder.  A few strands of saffron

Directions

  1. Put some saffron to soak in warm milk and keep aside.
  2. Take 1 cup chaana and knead it into a soft and smooth consistency.
  3. Add sugar and cardamom powder to the chaana. Keep kneading the mixture slowly to combine it evenly.
  4. Put a pan on low heat and transfer the chaana mixture.
  5. Let the chaana cook till it starts to let out some moisture and becomes mushy. Keep stirring continuously, so that it does not stick to the pan.
  6. Remember not to overcook the chaana. Remove the pan from the heat while the mixture is still moist and leaves the sides of the pan.
  7. Transfer the mixture into a bowl. Add the saffron and milk.
  8. Shape the mixture into small flat balls (using your hands or moulds) while the mixture is still warm.

The Sandesh are now ready to serve. It can be kept it in the refrigerator for 20 to 30 minutes and served chilled as well.
