Arek Edin (Pork Stew with Bamboo Shoots)

Ingredients

1 Kg Pork
3 teaspoon: Chopped bamboo shoots
1 teaspoon: Chopped ginger
1 teaspoon: Chopped garlic
1 piece: Tomato (medium-sized), quartered.
3-4 pieces: green chillies, chopped.
1 teaspoon: Salt

Directions

Preparing the stew:

  1. First wash the pork with proper care, drain and then cut into 1-inch pieces.
  2. After cutting the pork, place the pieces in a pan over high heat with enough water to cover the meat.
  3. Wait for the water to boil, then switch off the fire, and drain the water.
  4. Once the meat is drained, place the pork back into the pan, add a fresh round of water to the pan and bring to boil again.
  5. Then, mix in the remaining ingredients of chopped bamboo shoots, ginger, garlic, tomatoes, green chillies, and salt.
  6. Cover the pan and cook the stew over low heat.
  7. Simmer for around 30 minutes till the meat is soft and tender.
  8. Take the stew off the fire once the meat is cooked and serve with rice.
