Thevo Chu, Pork meat with Axone

Ingredients

1 kg : Pork
250 gms: Axone (fermented soybeans)
1/2 piece: King Chilli
1 cup: Diced Garlic
1 teaspoon: Table salt
1 cup: Choice of Herbs and other garnishing

Directions

  1. Thoroughly wash the pork with proper care and then drain the water.
  2. Cut the pork into generous square pieces with the bones.
  3. Place the pork in a deep pan over high heat with enough water to cover the meat.
  4. Let the pork boil for 25 minutes with the lid covered.
  5. Add the Axone and let the stew simmer for another 10 minutes.
  6. Grind the chilli and garlic into a paste and add it to the stew, with any choice of garnishing.
  7. Cover and cook on medium heat for 10 minutes.
  8. Serve hot with rice, vegetables, and a choice of Naga pickles.
