Doi

Description: "Doi" is the Bengali term for curd. Apart from being consumed in a plain manner, the Bengalis are also known for their sweet variant of curd known as "mishti doi". It is prepared by boiling milk till it thickens and then sweeting it with jaggery. This sweet mixture is kept overnight in an earthen vessel and allowed to ferment into curd.
